i love soup...but...with all of this snowy weather we've had...i think i'm about souped out.

How about this:
CHICKEN MARSALA CASSEROLE
1 tbsp. olive oil Salt & pepper ½ lb. chicken breasts ¼ cup onion, diced ½ cup mushrooms, sliced 1½ cups chicken stock 1 cup noodles 2 tbsp. Marsala Fresh parsley for garnish
1. Heat oil in a pan. 2. Sprinkle the breasts with salt & pepper, then brown the chicken breasts in oil. 3. Remove the breasts from the pan & cool. 4. Once they are cooled, dice them into 1” pieces. 5. Place the onion in the same pan & cook until they become translucent. 6. Add the mushrooms & cook until they are soft. 7. Add in the chicken stock, uncooked noodles & Marsala. 8. Cook for about 10 mins. or until the liquid is almost absorbed in the noodles. 9. Add the diced chicken back into the pan & cook until liquid is absorbed & noodles are soft.
Yield: 6 Servings

that sounds yummy vosa...i'll have to give that recipe a try...always looking for new ways to cook chicken. i must (and i'm embarrased to)say that i did make some chicken noodle soup today...not a big pot though.

Made a real quick easy cheater chicken soup the other night: 3 boneless frozen chicken breast 1 box low-sodium chicken broth 2 cups chopped celery 1 cup chopped carrots 1 tsp thyme 1 tsp marjoram 1 bay leaf 1 tsp freshly ground pepper 1 small onion, diced 1/2 tsp salt 4 cups water 1 cup rice
Put all in large soup pot- bring to boil, reduce to simmer, cover- cook for about an hour until very thick from rice. Pull out chicken and chop fine, add back to broth. Serves 4 easy- esp if you make bread or biscuits

Ha! Yes four chicken breast. They help... lol. Strange how that works out. The soup was pretty good. Had grilled chicken sandwiches, with tomato, lettuce, avocado, on fresh baked rolls. I marinated the chicken in lime juice, olive oil, honey, pepper, salt, and garlic.

i made some awesome navy bean soup yesterday in the crock pot. cooked 10 hours...beans (precooked beans 1/2 hour before putting them in the crock pot)...ham hock...chopped carrots...celery...onions...garlic. with...corn muffins. yummy!
