Mt. Airy is still there. Not too far from me. Some years ago - early 80's IIRC, my Father bought a calf and raised and fed it for a year on his farm in Burtonsville. After many adventures, he took it up to Mt. Airy and had it slaughtered and butchered. We enjoyed that meat for over a year, and I'm hard pressed to remember any better beef.

We didn't have a farm but my patents usually bought their beef by the side and we had a huge freezer. We did raise our own chickens for a few years.

I've read this has been done to maximize profit- finding new cuts to increase the amount of premium steaks that could be made and sold. Sounds good to me! I like a good flat iron and hanger steak as well. I'm sure it has been done to maximize profit - at the cost of quality. What you get today is nowhere near the quality of steaks that were available in my youth. There are only a few cuts that are premium - they have been well known for several centuries. Now it is all about a few soulless mega-corporations writing the rules to favor their own interests - the consumer be damned. The politicians? BWAHAHAHAHA! Oh man I hope you're wrong-- as go the steaks, there goes America!!!!

The Hunt Valley Amish Market is close to my house...my have to check it out again- heard they have good meats there. If you ever get up to Dallastown, PA (a little south of York on PA74), check out Sechrist Bros. Meats. They also make great hot dogs. www.sechristbros.com/

I'm very close to the Dutch Country Farmers' Market on Rte. 198 - I'll give them a shot. We used to get meat from them when they were still located in Burtonsville - kind of pricey then, but if they cut it the way I like it, it would be worth the $.

got the steaks at the new amish market here in town. it is a great market...very good fresh veggies and fruit as well. we've started shopping there more and more. folks over 60 get a 10% discount at some vendors on thursdays.

The Amish market near Shewsbury has a similar deal for seniors on Thursdays. Maybe the one on York Rd. near Valley View Farms has a similar deal, too.

My Father started the tradition when he moved to Burtonsvillle in the early 70's.

Parts of Montgomery County are still rural and agriculture based. Glad to see it hasn't died completely there. I wish I could afford to live around Etchison, Sunshine, or Laytonsville.

Got a flank steak for tomorrow. Going to marinate in salt, fresh peppper, grains of paradise, Worchestire sauce for a few hours..then into the broiler for a nice medium-medium rare.....
