Learned a new grilling tip and tried it out and it worked beautifully.
Normally when I grill fish I put it in foil as opposed to having it stick to the grill. I've seen the wooden planks but I just haven't bought one yet. The other night I sliced up lemons and put them on the grill and put the fish right on top of the lemon. Worked like a charm!

Mmmmmm, that picture made me sad that I cancelled my dinner plans for crabs tonight! As far as the soft shelled crabs, I think it's a texture thing with me. Everyone tells me I need to try it... I will someday!!! At worst............ do you like potato chips but they're not nearly that harsh...... ? I do like chips! So, you're comparing soft shelled crabs to chips??

I went to Mikes Crab House last night and I wussed out again! Are they better pan fried or deep fried? I guess that's kind of a dumb questions, isn't everything better deep fried??

You will go to your grave with that problem and I promise you, soft shelled crabs will probably not make the top ten of what you may have missed out on.

Lobster, oysters and shrimp isn't for everybody.... blue crab OTOH is because of both texture and sweetness..........

Tacos this week with marinated grilled chicken. Cooked poblano peppers, onions, then addeds chili powder, cumin, fesh garlic, roma tomatoes. Once cooked into the food processor until almost smooth. Reserve some for the tacos, use the rest for marinade. Add diced red onion, cilantro, lime juice to the tacos. Serve don grilled tortillas.

Did these this weekend... Chicken Foil Bundles 2 medium potatoes, thinly sliced, or 3/4 pound new potatoes, halved and quartered 4 skinless boneless chicken breast halves (I cut them in strips) 1 medium zucchini, cut into 1/2-inch slices 2 medium carrots, thinly sliced 1 1/2 cups whole mushrooms, halved 1 medium onion, thinly sliced (I used Vidalia) Salt and pepper 1 cup apple juice or cider 1/2 cup apricot preserves Directions 1. Precook potatoes in boiling water for 5 minutes; drain and cool. Place each chicken breast on an 18-inch square of heavy-duty foil. I spray the foil squares with a little Pam first to prevent sticking. 2. Divide potatoes, zucchini, carrots, mushrooms, and onion among foil squares; season with salt and pepper. Drizzle with apple juice or cider. Seal foil into packets leaving room for steam. Transport in an insulated cooler with ice packs. 3. Place packets directly over campfire or on the rack of an uncovered grill over medium-hot coals. Cook for 20 to 25 minutes or until chicken is done and vegetables are tender, turning once. To serve, open packets; spoon some of the preserves (you can add a little soy to the preserves if you don't like it so sweet) over chicken and vegetables in each packet. It's one of those meals that is nice to eat outside by a fire!!! Makes 4 servings.

KK did a delish marinated beef filet on the rotisserie on the grill yesterday...with grilled green beans and potatoes fresh from our gardens. YUM
