I have a zillion of them!
You can only make so many salads. I am going to try some pickling this weekend, I've never done it before!!
Any cucumber recipes idea you'd like to share??

Actually, they do make a nice and fresh sandwich on their own or with cheese, then there's Tzatziki, or how about 'angoura/domata salata' (cucumber and tomato salad). Of course you could pickle some.

A cucumber sandwich (a favorite of the Brits) is not known to many Americans IMHO, but I think cucumber sandwiches (either way) are pretty good.

Seems as though we all have a bumper crop this year! But with an abundance of everything (lots of rain!) we can only eat so much. Mostly we share with friends. Mrs. Mule did make some crock dills this year. And some relish. She also tried a different (for us) dish that was a cooked cucumber affair. Pretty good! The cuke is similar to a squash, but it fares so well as a raw vegetable that it is seldom used in a cooked presentation. Mostly we just OD on tomato, cucumber and green pepper salads.

a fav of mine is cukes and onions in vinegar...water...and...sugar. YUM but i agree...you can only eat so many. i've been able to supply most of the neighbors with tomatoes...cukes...lettuce...yellow squash...and...zucchini.

Pelled, seeded, chopped. Mix lemon juice, feta, fresh mint, salt pepper, add cucumbers. Serve with pita chips.

The easiest (and IMHO most authentic) recipe is: Half a cucumber part peeled, grated and squeezed to remove most of the moisture. 1 cup Greek yoghurt. 2 cloves garlic (very adjustable) Assemble, perhaps with a dash of evoo and a squeeze of lemon juice. Voila!

MICROWAVE PICKLES 1 large cucumber, thinly sliced 1 medium onion, thinly sliced ¾ cup sugar ½ cup white vinegar ½ tsp. mustard seed ¼ tsp. celery seed ¼ tsp. turmeric 1 tsp. salt 1. In a microwaveable 2-quart bowl, combine all ingredients. 2. Mix well. 3. Microwave uncovered at 80% power 5 mins., stirring halfway through. 4. Allow pickles to cool. 5. Cover and chill at least 2 hrs. before serving.

I think it's official! Our cucumbers are now Done. Can't remember another year when they have gone this far into the season. My neighbors supplied us all summer with cukes, they ended about 2 weeks ago!!
