We have been frying our bird(s) for the last few years. My mom is going to roast hers the traditional way this year. I am looking forward to the smell of turkey roasting in the oven. Even though the fried turkey is very tasty, it does not leave the house smelling delicious. My mom and I love candied "yams" but we can't seem to get the recipe to turn out properly. The juice is always very liquidy and it never thickens. It doesn't stop me from eating it but I wish I could figure out the trick. Are you using real sweet potatoes or canned? Canned; I've tried draining them. Maybe I need to drain them longer. My mom tried fresh sweet potatoes one year but it was a mash.

She's amazed by how sweet corn is at our house..I always assumed she used frozen cobbettes at her house...nope- fresh-- she then nukes the life out of them!!! AAGGHH!!!! I've never had canned yams so I just don't know what to tell ya. I did the following recipe for years until I was convinced to do them mashed which is what I do now. Here is the recipe I used to use.... Sweet Potato Bake 4 pounds sweet potatoes (all about the same size and not peeled) 5 tablespoons butter ⅔ cup brown sugar (I use dark) ½ cup Orange Juice 1 teaspoon cinnamon ½ teaspoon nutmeg ½ teaspoon ginger ½ teaspoon salt ¼ cup bourbon (optional) 2 cups mini marshmallows (optional) ½ cup pecan pieces (optional) Cover potatoes with water, and add enough salt to water so it tastes like the sea. Bring to a boil. Reduce heat and simmer for 25 minutes or until just tender. Drain and let potatoes cool. When cooled, peel (you can rub the skin right off) and cut potatoes into 1/4-inch thick rounds. Layer potatoes in greased baking dish. In small saucepan, combine butter, brown sugar, orange juice, cinnamon, nutmeg, ginger, salt, and bourbon. Bring mixture to a boil and cook for about 2 minutes. Pour over potatoes. Bake uncovered at 350 degrees for 40 minutes or until brown. Increase temperature to 500 degrees and top with mini marshmallows and pecans. Cook for 5 minutes or until pecans and marshmallow are lightly browned. While they are backing I baste them every so often just like I do the turkey! Enjoy!!

it's so hard to cook for just KK and i for thanksgiving. i was so used to cooking huge pots of everything for our family. cutting recipes down does not always turn out well. cowboyz...i used to make a sweet potato souffle that sounds like what you make. but...making it for one is impossible!

ahhhhhh velveeta...the UNcheese! still makes good mac and cheese though! It works well for quick and easy grilled cheese sandwiches too, Paint Lady!

Grilled cheese and tomato soup...mmm And it's not right unless it's American process cheese or Velveeta, with canned Campbell's tomato soup. Chemical engineering cuisine at its finest!!
