i made some killer crock pot beef stew yesterday...new recipe. put it on at 4 a.m. on low...then turned it to keep warm at noon. we ate at around 1...delish.

My recipe: 1 lbs braising beef, cubed 1/2 pound boiling potatoes, diced 1 large diced onion 3-4 large carrots, peeled, diced 3-4 ribs celery, with leaves, diced 2 tbps olive oil 1 large bay leaf 1 tsp dried thyme 1 tsp dried marjoram 1 bunch fresh flat leaf parsley, finely diced 1 tbps Worchestire sauce 2 tsp salt 1 tsp fresh ground black pepper 1/4 cup dry red wine - good drinking wine, not "cooking" swilll!
I brown meat in dry cast iron skillet, then put in crook pot and season with salt, pepper, Worchestire, bay leaf..put crock pot on high, add parsley and rest of veggies, add water to cover. Add oil to same pan, fry onions until brown, add herbs to oil, fry a minute or so more, then add to crock pot. Deglaze pan with wine, add to pot. Cook long and slow for 4-8 hours, until meat is falling apart tender. Serve with good homemade bread or biscuits!

1 medium sliced onion 1 large clove garlic 1 medium green pepper, chopped (i just grated a little bit and added it to the veggie mixture...not much of a green pepper fan) 3 Tablespoons oil 1/2 teaspoon salt 1/8 teaspoon pepper (i increased this because i love pepper) 1/3 cup barbecue sauce (used kraft honey...some spicy would be good to give it a little kick...didn't have any) 1 8 oz can diced tomatoes 2 cups diced potatoes 2 cups sliced carrots 1 cup chopped celery (i did add a little more) 3 cups beef stock 1 small can/jar mushrooms 2 lbs beef stew meat 3 tablespoons cornstarch 1/4 cup cold water
1. Sautee onion, pepper and carlic in oil. Add salt, pepper barbecue sauce, tomatoes, potatoes, carrots, celery, beef stock and mushrooms. 2. Add the stew meat to the crock pot, cover with mixture. Cook on low for 8 hrs...warm for 1 hour. 3. Mix cornstarch and cold water, add to crock pot to thicken before serving.
i must admit that i skipped #1...just mixed all of those ingredients in a bowl and poured over the stew meat.

oh...and btw...i did add some peas...i LOVE peas. yep...the BBQ sauce did add a really good flavor to the stew.

I like a little bit of green pepper flavor but not really that much. We actually like red bells peppers better.

I'm going to try your recipe PP it sounds very good, the only thing I'm going to change is deer meat instead of the 2lb. beef meat. I ,have done this before but with about half the stuff you have in yours, I just know its going to be much better.
