I got this recipe from Pinterest. Finally tried it last night, it was really good!
Bruschetta Chicken
Ingredients •1/2 cup flour •2 eggs, beaten •4 boneless, skinless chicken breasts (the recipe didn't call for it but I cut them in strips) •1/4 cup grated parmesan cheese •1/4 cup crushed garlic croutons •1 tablespoon butter, melt it •2 tomatoes •3 tablespoons minced fresh basil •2 garlic cloves, minced (appox. 1 teaspoon) •1 tablespoon olive oil •Salt & pepper
Preparation 1.Preheat oven on 375 degrees 2.Grease 9×13 baking dish 3.Put flour & beaten eggs in separate shallow bowls 4.Dip chicken into flour and then in eggs 5.Place into baking dish 6.Combine parmesan cheese, crushed croutons, & melted butter then sprinkle on chicken 7.Loosely cover with foil 8.Bake for 30-40 minutes, or until top is browned and chicken is cooked through 9.Chop tomatoes and combine with last ingredients 10.Spoon mixture over chicken, and return to oven for 5-7 minutes or until tomato mixture is heated through

cowboyz...i got some freshly made salsa at the Amish market last week. i took two chicken breasts...put them in a foil lined pan sprayed with olive oil cooking spray...covered them in the salsa...covered the pan with foil...and...baked at 350 for about 45 minutes...they were really big breasts. talk about tender and delish! too yummy!

I love the fresh salsa from the Amish Market, actually my Safeway has one too that's really good! Anyway, I do something similar but I do it in the crockpot!!
