this recipe was posted on OM several years ago by Kira. i've been making it since. it is the BEST roasted chicken. drippings make awesome gravy. YUM!
3 tsp salt 2 tsp paprika 1 tsp onion powder 1 tsp dried thyme 1 tsp white pepper 1/2 tsp cayenne pepper 1/2 tsp black pepper 1/2 tsp garlic powder 1 onion - quartered
5 lb chicken (i use the perdue oven stuffers)
mix all spices. rinse chicken, pat dry with paper towel. put chicken and all spices in a large cooking bag, shake to coat chicken. put the onion inside the chicken. seal the cooking bag.
refrigerate overnight (i do mine for two nights-tastier)
preheat oven to 250 degrees. remove chicken from cooking bag. place chicken in a roasting pan and bake 2 hours uncovered. cover and bake for 2 1/2 hours (basting very often). remove from oven and let stand at least 10 minutes before carving.
tip: if you use a chicken larger than 6 lbs...double the mixes to make sure the entire chicken is covered (i don't double the salt-just add 1 extra tsp).

I would do this with one exception. I would put whole unpeeled onions in the chicken. Omgosh I love onions like that. OR just throw them in a fire.

the onion sections come out soooooooooo good. a little crunchy...but full of the flavor from the spices. YUM

Mmmmm, onions on the grill.
Peel all of the skin off, cut the top, dig a hole, fill with butter and soy sauce. Wrap up in foil and cook on the grill until tender!
One of my favorite things on the grill.

I've done Old Bay on the onions PL, it's delicious. Serve with steamed shrimp!!
