I saw a tip on Pinterest for hard boiled eggs and it worked!!
Add 2 TB of baking soda to the boiling water and it makes it much easier to peel the shells off.
I used to run them under cold water while peeling which helped but this worked like a charm. No muss, no fuss!!
Thank you Pinterest!!

I heard another tip is to avoid over boiling. I read that as soon as you bring them to a boil, turn off the flame and cover, then let the eggs sit in the hot water for about 12 minutes.

Have to try the baking soda tip! I do the turn off water at boil- and let them sit for 20. The other HUGE factor on peeling- freshness. The fresher the egg, the harder to peel.

Large eggs, cover by a inch with cold water, bring to boil then gently simmer, time for 8 minutes then immediately place in cold water to cool. This gives me a firm but soft golden yolk, perfect for salads etc.

I've actually tried that a couple of times and the yolk wasn't quite cooked all the way through. Now I let them boil for 4 minutes and I take them off and let them stand for 10 minutes! Perfect every time!!

I didn't know that either but I don't buy fresh eggs at a farm and I have no idea how long the eggs have been around when I buy them, I only know the expiration date!!

Yeah-- I figure the closer to expiration, the less fresh they are!!
