My youngest and I have been looking at plans to build a smoke house. Doesn't look too complicated. Anyone on here have any experience? Yes. In the 1970's we lived in a rural area and would raise a pig every season. We are looking at something with a masonry foundation (maybe field stones) and a wood structure with a separate firebox. Should be interesting and fun to try. I know we have plenty of stones to build with an abundance of oak, cherry, mulberry wood to burn.

Not sure what your expectations are in this project, but definitely, a permanent structure would be the best move! Lots of advantages, including a proper storage space through the entire year. Contemporary American fashion and social protocol frowns upon cured meat products hanging from the kitchen ceiling!
Not: No experience with the woods you mention. In the Mid Atlantic area hickory has always been the drug of choice.

I have some hickory. My son does tree work so I hit him up from time to time. I like the hams from the ceiling look. HA

I don't know how well ash would work for smoking food, but IMHO ash has the best aroma over other woods when burned.

I can't eat today, I had all my calories last night in the dauphinoise potatoes that I made yesterday... yummy-yum-yum. to go with smoked haddock and cheese fishcakes and peas.

Tried a new recipe this weekend as a side for turkey breast..... cinnamon roasted butternut squash! Will definitely be making it again, a big hit!!
