Had some great BBQ at Tony Gore's Smoky Mountain Barbecue in Sevierville, TN a couple of nights ago... cooked me some smokin' hot Zaterans potatoes a few minutes ago... so easy to fix... so good to eat... mouth burning but smilin' too... yumm...

Today as we are out bowling and won't be back until 6(ish), something quick and easy, a store bought Quiche, new baby potatoes and a Greek Salad.

Today as we are out bowling and won't be back until 6(ish), something quick and easy, a store bought Quiche, new baby potatoes and a Greek Salad. We love quiche, I make them often.... even homemade is quick and easy! (well store bout pie crust)

Our house really smells of vinegar today! Mrs. Mule made her terrific relish. So good!
Yesterday it was Kosher Dills.

The process is primitive technology but it is not exactly "easy". The most important part is the "cure". We used a commercial product sold by Morton, a traditional salt and sugar rub. It takes time and labor, and must be done correctly. The smoking is less "technical". Our "system" was amazingly simple, and cheap! I constructed a temporary "structure" every winter. A tepee of hardwood poles wrapped with Poly sheeting! Pretty simple! As this was in Maine, the traditional fuel wood (hickory) was not an option. But no fear, since fruit woods are quite good (some of us would say superior) and Maine is loaded with old apple orchards. No firebox. Just a smudge type fire on the ground and an opening at the peak of the structure. It requires a fair amount of supervision, but very little "work". Must be tended 24 hours per day! Walking out through the snow at 2:00 AM? The worst worry is the possibility of predators and pests. In our very rural area it was bear and lynx and fisher. In my youth the structures in my area (Md.) were small permanent affairs and quite secure!
My only experience was with pork (hams, bacon, jowl meat, etc). We always had excellent results. Visitors used to marvel how in June and July we had slabs of bacon and lovely hams hanging at room temperature in our pantry!
