bought a quart jar of dry ingredients at the new Amish market that opened in town...just add 12 cups of water and chicken...simmer for 45 minutes. that's all. good thing is...it's not loaded with sodium and no msg. nice for a day like today.

HD...the ingredients listed are: little barn pasta (their brand), vegetable flakes, split peas, chicken base, onion powder, garlic powder and parsley flakes. they're all layered in the jar...very pretty. i'm making it later. let you know how it turns out.

My chicken soup: 2 cups chopped celery 2 cups chopped peeled carrots 1 bunch fresh parsley, choped 1 large onion, chopped 1 tsp. salt 1 tsp freshly ground pepper 1 tsp thyme 1 bay leaf 1 lb chicken- boneless breasts are easy 1 lb egg noodles 3 tbsp olive oil
Enough water to cover veggies a few inches
Brown onions in olive oil; stir in veggies, cook for a few minutes until fragrant and slightly browned. Add to water in large pot or crock pot. Stir everything else but noodles! If you're cooking fast method, cook on a brisk simmer for about an hour, remove chicken, chop it, add back in, and then add noodles, simmer for about another 15, and eat! If in using crock pot-- you can mash up chicken in broth before you serve, and add noodles about 30 min before you serve.
You can use whole chicken or chicken parts- more flavor, but trickier! Best to do that a day ahead and use crock pot. Put out chicken at end of day when cooked, pull out meat, add back to broth. Skim broth of excess fat- keep some that's the flavor!- the next day. Bring soup back to boil and add noodles.

Good variations-- chopped fennel is nice. Can add a can of tomatoes, can of cannelini beans, elbow pasta for a minestrone- top that with shaved Parmiggiano cheese, and add some basil, too! Ginger, hot pepper, bit of soy sauce and rice vinegar-- good Oriental soup base, esp wit ramen-style noodles. Extra hearty-- do it minestrone style, but add cheese ravioli. Or add spinach, couscous, and small meatballs- Italian wedding soup!

actually...the soup is quite good. very good flavors. the veggies ended up being potatoes...red bell pepper...green beans...all diced up very small. i added some shredded baked chicken breat that i had cooked previously. i would buy this again...and try some of the other soups that they offer.

This is a neat idea. I think it could be used as a cute gift idea too like for housewarming, first apartment. Actually you could even do your own recipes in jar to share.

ap...little barn...they have many nice things there. the noodles are delish! there was also some celery in it. but...unfortunately i miss read the sodium content...780 mg a cup!!!!!!!!!!!!!!!!! lordy be. i guess i'll have to give up these mixes and go back to making my own. shucks! thought i had discovered a good short cut to chicken noodle soup!

The doctor just read me the riot act: cut back on cholesterol, sodium and carbs. Since I don't eat greens, I'm having difficulty finding recipes for foods I can eat that don't kill me on one of the three.

i usually pay close attention to the sodium content in foods...i swell up like a balloon when i overdo on the stuff...puffy eyes...swollen hands and ankles. thank goodness for hctz...fluid pills that my dr recommended for those times i do overdo.

PL - I was at the Amish Market in Harrisonburg, VA on Saturday. I was looking at a bunch of the different soups you can get like that, I didn't get any because I do make a lot of my own soup but I was tempted. I may grab a couple next time I'm back there. I love going to the Amish Market, that's where I get my spices, nuts, a lot of snacks, apple cider. There is one here in Laurel where I like to go for meats and veggies in the summer!!
